Breakfast Stuff

Granola 1/2 cup olive oil

1/2 cup maple syrup (good quality)

3 cups oatmeal or quinoa flakes

course sea sakt

1 1/4 cup raw walnuts

1 1/4 cup raw pumpkin seeds

3/4 cup chopped dried figs (stems disgarded)

3/4 cup chopped pitted prunes

 

400 degrees. Whisk together olive oil and maple syrup in mixing bowl. Add oatmeal or quinoa flakes. Evenly spread on parchment paper lined baking sheet. Roast, stirring now and then, until flakes are dried and crunchy and golden brown - about 25 minutes. Let mixture cool and then add other ingredients. 

 

Blueberry Jam,no sugar added

Ingredients:

2.5 fresh blueberries

1 tbsp boiling water

aqueeze of lemon

1/2 tbsp honey

1 tsp cinnamon

2 tbsp chia seeds

Add blueberries and water to a pan over medium eat and simmer for 3-5 minutes util soft. Use potato masher to crush the berries into a paste - or leave a bit chunky. Stir in lemon juice, honey and cinnamon to taste. Remove from heat and stir in chia seeds. Cool and pop into fridg for 1-2 hours.
